What each ingredient does

Pearl tapioca
Starch that thickens the milk as it cooks, giving the cream its body.
Milk
Forms the liquid base that the tapioca thickens and the eggs set into.
Egg yolk
Thickens and enriches the cream as it sets gently over heat.
Egg whites
Whipped into a foam that gives the meringue lift and structure.
Sugar
Sweetens the cream and helps stabilise the whipped egg white meringue.
Butter
Adds richness and a smooth mouthfeel to the finished cream.

The step that matters

Setting the eggs gently. Egg yolks thicken at a fairly low temperature and curdle if overheated. Cooking only until the custard just sets, and stirring it while it heats, keeps the cream smooth and glossy rather than grainy.
