The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough once mixed with water.
Butter
Stays in solid pieces within the dough, creating flaky layers as the pastry is folded and rolled.
Lemon juice or white vinegar
Acid that helps tenderise the dough by limiting gluten development.

The step that matters

Keeping the butter cold and in pieces. If the butter softens and blends into the flour, it will not stay in separate layers during folding. Those layers of solid fat are what make the pastry flaky when baked, so the dough and butter should stay cold.
