What each ingredient does

White sauce
Forms the creamy base that is reduced and coats the chicken pieces.
Cream
Adds richness and a smoother, silkier texture to the sauce.
Aspic jelly
Gelatin-based jelly that sets the sauce into a glossy coating and adds firmness.
Mayonnaise sauce
Adds fat and body, giving the dish a rich, creamy mouthfeel.

The step that matters

Reducing the white sauce to ⅓ cup. Reducing concentrates the sauce and thickens it so it clings to the chicken. If it is too thin it will run off, and if it is too thick it will coat unevenly.
