Lobster Cutlets

Ingredients

Directions

  1. Take a small hen-lobster and place it on a board.

  2. Use a chopper to break the shell by hitting it with the blade, not the edge.

  3. Remove the shell from the claws and back, and extract all the flesh.

  4. Cut the lobster flesh into small dice-sized pieces.

  5. If it's a hen-lobster, remove the coral from the neck and back, and wash it in cold water.

  6. Pound the coral and 1 ounce of butter in a mortar until well combined.

  7. Pass the mixture through a sieve into a plate, scraping off any residue.

  8. In a stewpan, mix 1 ounce of flour and ½ ounce of butter with a wooden spoon.

  9. Add ½ cup of cold water and place the stewpan on the fire, stirring continuously.
