Puff-paste

Ingredients

Directions

  1. Place the flour in a heap on a clean board and make a well in the center.

  2. Add half of the egg yolk into the well.

  3. Add the lemon juice.

  4. Wrap the butter in a clean cloth and squeeze out the water.

  5. Mix all ingredients together with your hands, adding water to achieve the same consistency as the squeezed butter.

  6. Flour a rolling pin and sprinkle flour on the board to prevent sticking.

  7. Roll out the paste to about ¼ inch thick.

  8. Place the pat of squeezed butter on one half of the paste and fold the other half over it, pressing the edges together.

  9. Let it rest on a plate in a cool place for 15 minutes.

  10. Roll out the paste again and fold it in thirds.

  11. Turn it so the rough edges face you.

  12. Roll it out again and fold it in thirds.

  13. Let it rest for another 15 minutes.

  14. Repeat the rolling and folding process two more times, resting for 15 minutes each time.
