Carrot Pudding

Ingredients

Directions

Prepare

  1. Wash and scrape the carrots clean.

  2. Grate the red part of the carrots into a basin until you have about ¼ pound.

  3. Stand a wire sieve over a plate and rub the bread through the sieve to obtain about 3 ounces of bread crumbs.

  4. Add the bread crumbs and 1 ounce of powdered sugar to the basin with the carrots.

Make the custard

  1. Melt 2 ounces of butter in a stewpan over low heat.

  2. Remove the stewpan from the heat and let it cool slightly.

  3. Stir in ⅓ cup sherry, ½ cup cream, and 1 tablespoon orange‑flower water.

  4. Add the yolks of 2 eggs to the mixture.

  5. Whip the egg whites to stiff peaks and gently fold them into the mixture.

  6. Combine the mixture with the carrots and bread crumbs, mixing well.

Bake

  1. Line a pie dish (about 1 pint) with puff‑paste.

  2. Pour the pudding mixture into the pie dish and bake in a 400°F (200°C) oven for 30 minutes.

What each ingredient does

Carrots
Provide the bulk and natural sweetness that give the pudding its body and flavor.
Bread crumbs
Absorb liquid and help bind the mixture so it holds a soft, set texture.
Eggs
Egg yolks enrich and bind the custard, while whipped whites lighten it and help it rise and set.
Butter
Adds richness and fat, giving the pudding a tender, moist texture.
Cream
Adds moisture and richness, making the mixture smoother and more tender.
Sherry
Adds moisture and a warm, aromatic flavor to the pudding.

The step that matters

Folding in the egg whites. Whipped whites trap air that gives lift; folding gently keeps that air in, while vigorous stirring deflates the foam and leaves a denser pudding.

Swap the carrot
