Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Provides the structure that holds the nuts together as they bake.
Treacle
Adds sweetness, moisture, and a dark, rich colour to the dough.
Butter
Adds fat for tenderness and a smooth, cohesive dough.
Ground ginger
Supplies the main spiced aroma that defines the gingerbread flavour.
Carbonate of soda
Reacts with the acidic treacle to lift and lighten the nuts as they bake.

The step that matters

Knead the paste until smooth. Thorough kneading evenly distributes the fat, treacle, and flour so the dough bakes uniformly and the nuts keep a consistent texture.
