Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set in boiling water with vinegar, they form the main dish on the toast.
Butter
Enriches the sauce and coats the toast, adding richness and flavour.
Flour
Thickens the butter and milk into a smooth white sauce.
Milk
Forms the liquid base of the sauce, giving it body and creaminess.

The step that matters

Stirring the sauce as the milk goes in. Adding hot milk quickly while stirring keeps the flour and butter mixture smooth, preventing lumps. Letting the sauce boil afterward fully cooks the flour, so it thickens and loses its raw taste.

Swap the parsley

How well each one fits the dish's main ingredients (egg, vinegar, butter, flour, milk, chive):

  1. Capersfits better
  2. Tarragonfits better
  3. Nutmegfits about as well
  4. Parsleythe original

Fit is the average pairing score against egg, vinegar, butter, flour, milk, chive. Candidates are from the same food group and used in at least 100 recipes.
