Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch the almonds and pound them into a smooth paste.

Shape

  1. Add lemon essence, powdered sugar, and egg whites; mix well with the back of a spoon.

  2. Wet your hands and roll the mixture into balls the size of nutmeg.

  3. Place the balls on buttered paper, one inch apart.

  4. Wet your hands again and smooth the surface of the macaroons.

Bake

  1. Bake in a cool oven at 300°F (150°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the main body and nutty flavor of the macaroons, forming the paste base.
Powdered sugar
Adds sweetness and helps bind the mixture into a soft, moldable dough.
Egg whites
Give structure and binding so the balls hold their shape while baking.
Lemon essence
Adds aroma and bright flavor to the almond base.

The step that matters

Bake in a cool oven. A cool oven dries the outside slowly, so the macaroons set and stay pale rather than browning, cracking, or spreading too quickly. Baking too hot risks scorching the surface before the interior sets.

Swap the almond

How well each one fits the dish's main ingredients (lemon, sugar, egg):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against lemon, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
