Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Butter a baking dish.

  3. Mix the cracker crumbs with the melted butter.

  4. Divide the crumbs into three parts.

Layer and bake

  1. Cover the bottom of the baking dish with one part of the crumbs.

  2. Place half of the oysters on top of the crumbs and cover with half of the oyster liquor.

  3. Add another layer of crumbs, then the remaining oysters and liquor.

  4. Top with the last part of the crumbs.

  5. Bake for 30 minutes until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main body and briny flavor of the dish.
Cracker crumbs
Form the layers that soak up liquid and set into a crisp, golden topping.
Butter
Coats the crumbs so they brown evenly and add richness.
Milk
Adds moisture and softens the crumbs while the dish bakes.

The step that matters

Layering the crumbs and oysters. Keeping the crumb layers between the oysters lets the crumbs absorb the oyster liquor and milk, so the dish stays moist rather than drying out or turning soggy on top.
