Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid into a firm, wobbly jelly as it cools.
Sugar
Adds sweetness and balances the sharpness of the lemon juice.
Lemon juice
Provides acidity and the main lemon flavor.
Lemon rind
Adds aromatic lemon oil for extra fragrance.

The step that matters

Beat the jelly while it is jelly-like. If the jelly is beaten after it has fully set, it will not lighten. Beating while it is partly set traps air in the gel, making it white and fluffy as it firms.
