Ingredients

Directions

Prepare

  1. Slice the eggplant into ¼‑inch thick slices.

  2. Lightly rub the slices with coarse sea salt and stack them to draw out moisture for 30 minutes.

  3. Wipe the slices dry and dust them lightly with black pepper and all-purpose flour.

Fry

  1. Heat equal parts lard and butter in a thick cast‑iron pan over medium heat.

  2. Fry the slices until golden brown, turning them to cook evenly and adding more fat as needed.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the tender, moist body of the slices once its surface is cooked.
All-purpose flour
Forms a light coating that helps the slices brown and crisp in the fat.
Lard
Conducts heat evenly and fries the slices, adding richness and browning.
Butter
Adds flavour and helps the slices brown in the hot fat.

The step that matters

Drawing out moisture before frying. Salting and stacking the slices draws out water, which would otherwise steam the eggplant and keep it from browning. Wiping them dry before dusting keeps the flour coating from turning gummy.

Swap the eggplant

How well each one fits the dish's main ingredients (pepper, flour, butter):

  1. Shallotfits better
  2. Chivefits about as well
  3. Capsicumfits about as well
  4. Eggplantthe original
