What each ingredient does

Eggs
Bind the mixture and help the pudding set as it steams.
Bread crumbs
Provide the body of the pudding, soaking up moisture and holding the fruit together.
Suet
Adds fat that keeps the steamed pudding moist and rich.
Currants
Add chewy fruit pieces and sweetness throughout the pudding.
Sugar
Sweetens the pudding and the sauce.
Rum
Adds aroma and warmth to the sauce.

The step that matters

Keeping the steaming water boiling. The mold must stay in gently boiling water for the full steaming time. If the water drops too low, the pudding cooks unevenly and can turn out dense and heavy.
