What each ingredient does

Lentils
Form the main body of the dish, becoming tender and creamy as they simmer.
Drippings
Add savory, meaty richness to the cooking liquid.
Butter
Adds fat and a rounded, rich flavor when stirred in at the end.
Sugar
Adds a little sweetness to balance the savory seasoning.

The step that matters

Simmer gently and keep the lentils covered with water. Boiling hard can break lentils apart and make them mushy, while gentle simmering keeps them intact. Topping up with cold water every 15 minutes helps prevent scorching and keeps the lentils submerged as they soften.

Swap the lentils

How well each one fits the dish's main ingredients (onion, butter, parsley, pepper, sugar):

  1. Chickpeafits better
  2. Black-eyed peafits better
  3. Beansfits about as well
  4. Lentilsthe original

Fit is the average pairing score against onion, butter, parsley, pepper, sugar. Candidates are from the same food group and used in at least 100 recipes.
