What each ingredient does

Potatoes
Form the main body of the dish, cooking to a soft, starchy interior as they boil.

The step that matters

Boil until tender enough to pierce with a fork. Potatoes cook through unevenly if pieces differ in size, and undercooked centres stay firm and chalky. Testing with a fork confirms the starch has gelatinised all the way through.
