Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Boil the freshened mackerel in a kettle of boiling water for 15 to 20 minutes.

  2. Remove the fish with a skimmer, then remove the head and skin.

Bake and serve

  1. Place the fish in a baking tin and sprinkle with pepper.

  2. Pour the sweet cream over the fish.

  3. Bake in a 400°F (200°C) oven for 10 minutes.

  4. Serve immediately.

What each ingredient does

Mackerel
Main protein; its flesh firms and flakes as it cooks through.
Sweet cream
Adds moisture and richness, and its milk solids help the surface brown lightly.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
