Make the oyster cream

  1. Heat the cream in a double boiler.

  3. While the cream is heating, bring the oysters to a boil in their own liquor; skim carefully.

  4. Add the oysters and a little of the liquor to the cream and bring to a boil.

Serve

  1. Fill hot pastry shells with the mixture and serve immediately.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavour and texture of the filling.
Cream
Forms the rich, smooth body of the filling.
Flour
Thickens the cream so the filling holds its shape in the shells.

The step that matters

Skimming the oysters while they come to a boil. Oysters release liquor and small bits of shell or debris as they heat. Skimming keeps the liquor clear and the filling clean-tasting, and gentle heat keeps the oysters tender instead of tough and shrunken.
