Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the pudding

  1. Stew the apples until soft.

  2. Beat the apples and mix in sugar, butter, bread crumbs, and beaten eggs.

  3. Pour the mixture into a buttered baking dish.

  4. Bake for 30 minutes at 350°F (175°C).

Serve

  1. Serve with cream or enjoy on its own.

  2. Sift a little powdered sugar over the top before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and fruity flavor, softening into a moist base when stewed.
Eggs
Bind the mixture and help it set into a custard-like texture as it bakes.
Bread crumbs
Absorb liquid and add body, giving the pudding structure rather than a runny texture.
Sugar
Adds sweetness and contributes to browning on the baked surface.

The step that matters

Stewing the apples until soft. Apples that are not cooked fully soft will stay firm and release less moisture, so the beaten mixture will not blend evenly and the pudding may bake unevenly.

Swap the apple

How well each one fits the dish's main ingredients (sugar, butter, bread, egg):
