What each ingredient does

Green apricots
Provide the fruit that softens and forms the body of the compote.
Clarified sugar
Sweetens the fruit and, once boiled, thickens the syrup that coats it.

The step that matters

Skimming while the apricots boil in syrup. Skimming removes foam and loose fruit particles that would otherwise cloud the syrup and spoil the clear appearance of the compote. Keeping the boil controlled prevents the apricots from breaking apart.
