What each ingredient does
- Bacon
- Supplies fat and savoury flavour, and the fat helps the bread coating brown and crisp.
- Crust of bread
- Grated crumbs form a coating that browns and crisps in the hot fat.
The step that matters
Browning the bread coating. Crumbs brown quickly through the Maillard reaction and can scorch before the bacon is cooked through. Watch the first side closely, and turn the slices when the coating is golden rather than dark.
