Lemon Pudding

Ingredients

Directions

  1. Grate the yellow part of the lemon rind and squeeze the juice into a bowl, removing seeds.

  2. Mix the lemon juice and grated rind together.

  3. In a deep bowl, combine the powdered sugar and butter, softening the butter if necessary, and mix until light and creamy.

  4. Beat the eggs in a separate bowl until smooth and thick like custard.

  5. Gradually stir the eggs into the butter and sugar mixture.

  6. Add the wine, brandy, and rose-water gradually, then stir in the lemon mixture.

  7. Prepare a paste with the flour and butter, using as little water as possible, and roll it out to fit a soup plate.

  8. Butter the soup plate well and lay the paste in it, ensuring it covers the bottom and sides.
