What each ingredient does

Eggs
Egg yolks thicken the custard as they heat, giving it a smooth, set body.
Almonds
Ground almond paste gives the custard its flavor and a rich, thick body.
Cream
Adds fat for a rich, velvety texture and mouthfeel.
Milk
Provides liquid that, with the yolks, forms the custard base.
White sugar
Adds sweetness and helps soften the set custard.
Rose water
Adds a floral aroma that flavors the almond paste.

The step that matters

Heat gently, stirring continuously until thickened but not curdled. Egg yolks set at moderate heat; if the custard is heated too fast or left unstirred, the proteins overcook and curdle, leaving a grainy texture.
