Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard-boiled egg yolks
Mashed yolks form a smooth, rich base that thickens and emulsifies the dressing.
Sweet oil
Adds fat and moisture, giving the dressing a silky, coating texture.
Vinegar
Adds acidity that brightens the flavor and balances the richness of the yolks and oil.
Mixed mustard
Adds sharpness and helps bind the dressing together.
Celery
Provides crisp texture and fresh flavor that contrasts the soft dressing.

The step that matters

Mashing and mixing the dressing until smooth. Yolks must be mashed fully before the oil is added so they can emulsify with it. If they stay lumpy or the dressing is not thoroughly combined, it can separate or feel greasy rather than creamy.

Swap the celery

How well each one fits the dish's main ingredients (egg, vinegar, mustard, pepper):
