Ice Cream

Why it works: Cream and sugar are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓

Ice Cream

Ingredients

Directions

Make the base

  1. Boil the cream and let it cool.

  2. Stir in the sugar gradually until well mixed, then strain through a sieve.

  3. Pour the mixture into a covered tin.

Freeze and finish

  1. Place the tin in a tub filled with crushed ice and sprinkle with coarse sea salt, ensuring no salt enters the cream.

  2. As it freezes, scrape the cream down with a spoon.

  3. Gradually stir in the lemon juice or mashed strawberries/raspberries while freezing.

  4. Once frozen, dip the tin in lukewarm water to remove the ice cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rich cream
Provides fat and richness, giving the frozen ice cream a smooth, creamy texture.
Powdered loaf sugar
Adds sweetness and lowers the freezing point, keeping the ice cream softer when frozen.
Lemon juice
Adds acidity and bright flavour that balances the sweetness of the cream and sugar.

The step that matters

Scraping the cream while it freezes. Scraping keeps ice crystals small and breaks up those that form, so the ice cream stays smooth rather than icy and grainy as it sets.

Swap the lemon

How well each one fits the dish's main ingredients (cream, sugar, rose):

  1. Vanillafits better
  2. Raspberryfits better
  3. Strawberryfits better
  4. Lemonthe original

Fit is the average pairing score against cream, sugar, rose. Candidates are from the same food group and used in at least 100 recipes.
