What each ingredient does

Molasses
Provides the main body, dark color and rich sweet flavor of the candy.
Brown sugar
Adds sweetness and helps the candy set firm as it cools.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.

The step that matters

Boiling the mixture for 3 hours. The candy sets hard only when it is boiled long enough to reach a high sugar concentration. Stopping early leaves it soft and sticky, while boiling too long can scorch the molasses and make it bitter.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (molasses, sugar, lemon, butter, almond):

  1. Pistachiofits better
  2. Flaxseedfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against molasses, sugar, lemon, butter, almond. Candidates are from the same food group and used in at least 100 recipes.
