Ingredients

Directions

  1. Singed, picked, and wiped the chicken with a wet towel.

  2. Cut the skin down the back of the neck and remove the neck.

  3. Remove the crop and cut off the wings, taking a bit of breast with each wing.

  4. Cut the wings in two and remove the tips.

  5. Place the chicken pieces on two plates, separating good pieces from inferior ones.

  6. Remove the wing side bone and cut forward to break off the shoulder bone.

  7. Cut the breast into several good-sized pieces.

  8. Cut off the other wing in the same manner.

  9. Cut off the leg and second joint together, then cut into three pieces for even cooking.
