Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Peel and slice enough potatoes to half fill a moderate-sized baking dish.

  2. Butter the dish and layer the potatoes on the bottom.

  3. Add pieces of cooked meat or slices of lean bacon.

  4. Sprinkle chopped herbs and onions over the meat.

  5. Add another layer of potatoes until the dish is full.

  6. Dot the top with pieces of butter and cover with a crust.

  7. Bake at 350°F (175°C) for 45 minutes.

  8. Pour in a little rich gravy and cook for an additional 15 minutes.
