What each ingredient does

Gelatin
Sets the syrup into a firm, sliceable jelly as it cools.
Peaches
Supply fruit flesh and flavor suspended throughout the set jelly.
Peach syrup
Provides the liquid base and sweetness for the jelly.
Lemon juice
Adds acidity that brightens the sweet peach flavor.

The step that matters

Let the mixture stand until it begins to thicken. Adding peaches too early, or setting before the mixture thickens, can let fruit sink or cause uneven setting. Gelatin needs to be partly set so the peach pieces stay evenly distributed.

Swap the lemon

How well each one fits the dish's main ingredients (peach, gelatin):

  1. Apricotfits better
  2. Vanillafits better
  3. Raspberryfits better
