Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Peaches
Provide the main fruit flavor and, once riced, the body and moisture of the ice cream.
Sugar
Adds sweetness and keeps the frozen ice cream softer by lowering its freezing point.
Thin cream
Adds fat and richness, giving the ice cream a smooth, creamy texture.
Lemon juice
Adds acidity that brightens the peach flavor and keeps it from tasting flat.

The step that matters

Transfer the mixture to a freezer and add the cream. Sugar and fat both shape the texture as the mixture freezes. Adding the cream and sugar in the stated amounts keeps the ice cream smooth rather than icy or hard.

Swap the lemon
