What each ingredient does

Saltpetre
Preserves the meat and gives it its characteristic pink colour during curing.
Brown sugar
Adds sweetness and helps balance the salt and curing agent in the rub.
Coarse sea salt
Draws moisture out of the beef and seasons it deeply during the long cure.
Black pepper
Adds sharp, aromatic heat to the spice crust on the outside of the beef.

The step that matters

Turning and basting the beef every other day for 30 days. The cure works by salt and curing agents slowly penetrating the meat. Skipping turns leaves one side unevenly cured, and letting the surface dry out or spoil can cause uneven preservation.

Swap the mace

How well each one fits the dish's main ingredients (sugar, allspice, pepper, clove):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against sugar, allspice, pepper, clove. Candidates are from the same food group and used in at least 100 recipes.
