Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread
Forms the body of the pudding and soaks up the milk and eggs.
Milk
Softens the bread and provides moisture for a tender custard-like texture.
Egg yolks
Add richness and help bind the pudding as it cooks and sets.
Egg whites
Add lightness and help the pudding hold its structure when heated.
Flour
Thickens the mixture so it holds together rather than turning watery.

The step that matters

Boil for 2 hours. Boiling for the full time lets the egg proteins set and the flour thicken the mixture. Too short a time leaves the pudding wet and loose in the centre.

Swap the nutmeg

How well each one fits the dish's main ingredients (bread, milk, egg, flour, raisin):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Capersfits less well
  4. Turmericfits less well

Fit is the average pairing score against bread, milk, egg, flour, raisin. Candidates are from the same food group and used in at least 100 recipes.
