What each ingredient does

Grapes
Provide the juice and natural pectin that set the jelly.
Sugar
Sweetens the jelly and helps it set when boiled with the juice.

The step that matters

Boiling the juice with sugar. Boiling the juice and sugar for the full time concentrates the mixture and helps it reach a gel point. Skimming removes foam so the jelly stays clear.
