Pickled Cauliflowers

Ingredients

Directions

  1. Remove the leaves and stalks from the cauliflowers and divide the blossoms into equal-sized clusters.

  2. Bring a porcelain kettle of water to a boil, adding a little salt.

  3. Simmer the cauliflower clusters, skimming the surface as needed.

  4. Once boiling, use a perforated skimmer to remove the cauliflower and drain on a sieve.

  5. Place the drained cauliflower into stone jars, filling them three-quarters full.

  6. Infuse mace and nutmeg in cider vinegar and simmer for 1 hour.

  7. Pour the hot vinegar mixture over the cauliflower in the jars, filling them to the top.

  8. Add sweet oil last, cover while warm, and seal with leather.
