What each ingredient does

Oysters
Provide the main body of the dish, cooking until plump with curled edges.
Cream
Adds richness and a smooth, moist texture to the sauce.
Egg yolk
Thickens the cream gently as it is stirred in at the end.
Cracker crumbs
Lightly thicken the butter and absorb liquid for body.
Butter
Provides fat and flavor as the base for cooking the dish.

The step that matters

Stirring in the egg yolk. Egg yolk thickens when heated, but if the cream is too hot or boiling, it can curdle or scramble. Adding it after the oysters have plumped and while the heat is controlled keeps the sauce smooth.

Swap the celery

How well each one fits the dish's main ingredients (butter, oyster, pepper, cream, egg, lemon):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Tarragonfits better
  4. Celerythe original

Fit is the average pairing score against butter, oyster, pepper, cream, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
