What each ingredient does

Sugar
Adds sweetness and helps give the jelly body as it dissolves in the liquid.
Lemon juice
Adds acidity that brightens the flavour and balances the sugar.
Oranges
Add juicy pieces and citrus flavour to the jelly.
Bananas
Add soft texture and mild sweetness to the set jelly.
Figs
Add chewy texture and concentrated sweetness.
Walnuts
Add crunch and a nutty, slightly bitter contrast to the soft jelly.

The step that matters

Stir the fruits and nuts well into the jelly. If the jelly has set too firm, the fruit and nuts will not distribute evenly; if it is still too liquid, they will sink to the bottom. Stirring at the right point of partial setting keeps them suspended throughout.

Swap the walnut

How well each one fits the dish's main ingredients (lemon, sugar, orange, banana, fig, cream):

  1. Almondfits better
  2. Pistachiofits better
  3. Hazelnutfits about as well
  4. Walnutthe original

Fit is the average pairing score against lemon, sugar, orange, banana, fig, cream. Candidates are from the same food group and used in at least 100 recipes.
