Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the mixture and add richness as they cook over heat.
Egg whites
Add airy volume and a light, delicate texture to the cooked mixture.
Sugar
Sweetens the lemon juice and helps balance its acidity.
Lemon juice
Provides the sharp, acidic flavour that defines the dessert.

The step that matters

Heat until it comes to a boil. Egg yolks thicken as they cook, but overheating can cause them to scramble and curdle. Watch closely so the mixture thickens smoothly before removing it from the heat.
