Lemon Cheese Cake

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Beat the eggs and sugar together.

  2. Add the lemon juice and butter (do not melt the butter).

  3. Place the mixture in a double boiler and stir gently.

  4. This quantity makes two pies.

  5. Line a pie tin with a nice crust and make slits in the edge an inch apart all around.

  6. Pour the custard into the pie crust and fold down every other square formed by the slits.

  7. Bake in a hot oven at 400°F (200°C) until done.
