Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Sift the flour and sugar together, and grate the lemon peel.

  3. Squeeze the juice from the lemon.

  4. Butter the cake tins.

Make the batter

  1. Beat the egg whites and yolks separately for at least 30 minutes, adding half the sugar to the yolks.

  2. Combine the yolks with the egg whites, then gently fold in the remaining sugar, flour, and lemon juice and rind.

Bake and finish

  1. Pour the batter into the prepared tins and bake until golden.

  2. Once baked, spread a thin layer of icing flavored with vanilla on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped egg foam traps air, giving the cake its light, risen structure.
Powdered sugar
Sweetens the cake and helps stabilise the beaten egg foam.
Flour
Provides the protein-based structure that sets the cake's crumb.
Lemon
Adds bright acidity and aroma that balance the sweetness.

The step that matters

Fold gently. Fold the batter gently so the air whipped into the eggs is not knocked out. That trapped air is what makes the sponge rise, so heavy stirring leaves a dense cake.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, flour, butter):
