Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and help it thicken as it gently heats.
Butter
Adds richness and a smooth, creamy texture to the paste.
Powdered white sugar
Sweetens the paste and blends smoothly into the butter for a fine texture.
Lemons
Provide the rind's aroma and the juice's acidity for a bright flavour.

The step that matters

Stir gently over the boiling water until it thickens. Eggs thicken when heated gently, but too much heat can scramble them. Cooking over simmering water, not direct heat, keeps the paste smooth and lets it thicken evenly to a honey-like consistency.
