Directions

Prepare the vegetables

  1. Combine the salt and water to make a brine.

  2. Add the vegetables to the brine and let them stand for 24 hours.

  3. Drain the vegetables and set aside.

Make the dressing and serve

  1. In a pot, combine vinegar, mustard, brown sugar, flour, curry powder, and celery seed. Boil the mixture for 5 minutes.

What each ingredient does

Cauliflower
Forms the bulk of the pickle and absorbs the brine and dressing flavours.
Vinegar
Provides the acidity that preserves the vegetables and gives the pickle its tang.
Flour
Thickens the dressing so it clings to the vegetables instead of running off.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar and mustard.
Mustard
Supplies the sharp, pungent flavour that defines the pickle.

The step that matters

Boil the dressing for 5 minutes. Flour thickens only when heated enough to gelatinise its starch. Boiling for the full time cooks out the raw flour taste and gives the thick, creamy consistency the dressing needs to coat the vegetables.
