Ingredients

Directions

Make the syrup

  1. Boil the sugar, corn syrup, and boiling water until a hard ball forms in cold water.

Whip and combine

  1. Beat the egg whites until stiff and dry.

  2. Pour the syrup gradually over the beaten egg whites while continuing to beat.

  3. Add the chopped nuts and beat until creamy.

Shape and set

  1. Spread the mixture ½ inch thick on a greased pan and cut into squares.

  2. Alternatively, drop spoonfuls onto greased paper instead of spreading.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the candy its light, airy structure.
Granulated sugar
Cooked into a syrup that sets firm as it cools, giving the candy its body and sweetness.
Corn syrup
Helps keep the cooked sugar smooth and stops it from turning grainy.

The step that matters

Pour the syrup gradually while beating. Adding hot syrup slowly lets the egg white foam absorb it evenly. Pouring too fast can collapse the foam and leave the candy dense rather than light.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, corn, syrup, egg, vanilla):

  1. Chestnutfits better
  2. Almondfits better
  3. Hazelnutfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, corn, syrup, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
