Roasted Hares
Ingredients
Directions
The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.
Preheat the oven to 300°F (150°C).
Place the hares in a dripping pan and add boiling water.
Roast slowly for 1 to 2 hours, basting every 15-20 minutes.
If browning too fast, cover with a damp cloth.
Test doneness with a fork.
Remove hares and drain grease from the pan.
Add liver and cooking liquor to the pan.
Thicken with browned flour mixed with milk or water, and boil briefly.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
