What each ingredient does

Summer squash
Forms the main body of the dish, becoming soft and mashable once steamed.
Butter
Adds fat and richness, giving the mash a smoother, silkier mouthfeel.
Whipped cream
Adds fat and moisture, making the mash creamier and lighter in texture.
Sugar
Adds sweetness that balances the mild, vegetal flavour of the squash.

The step that matters

Evaporating remaining water while mashing. Squash holds water that dilutes flavour and makes the mash watery. Cooking off the excess moisture in the kettle concentrates the flavour and gives a thicker, more spoonable texture before the dairy is added.

Swap the white pepper

How well each one fits the dish's main ingredients (butter, sugar, cream):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Tarragonfits better
  4. White pepperthe original
