What each ingredient does

Vinegar
Provides the sharp acidity that balances the sweetness and helps preserve the fruit.
Sugar
Sweetens the pickle and, dissolved into a syrup, helps preserve the fruit.
Crab apples
Supply the tart fruit that is pickled and absorbs the flavour of the syrup.

Swap the clove

The recipe marks clove as optional. How well each one fits the dish's main ingredients (vinegar, sugar, crab, apple, cinnamon, allspice):

  1. Clovethe original
  2. Nutmegfits about as well
  3. Gingerfits less well
  4. Tarragonfits less well

Fit is the average pairing score against vinegar, sugar, crab, apple, cinnamon, allspice. Candidates are from the same food group and used in at least 100 recipes.
