What each ingredient does

Chestnuts
Their starch thickens the stock and gives the soup its body and mild, nutty flavor.
White stock
Forms the liquid base that carries the chestnut flavor and softens the chestnuts as they simmer.
Milk or cream
Adds fat for richness and a smoother, rounder mouthfeel.

The step that matters

Rubbing the chestnut puree through a fine sieve. Skins, fibers and lumps left in the chestnuts would make the soup grainy. Pressing the softened chestnuts through a fine sieve breaks down the starch-rich cells into a smooth, even texture.
