Why it works: Lamb and pepper are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 3,165 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Dressed Lamb's Head
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the head
Remove the brains and thoroughly cleanse the head and pluck.
Set aside half the liver, then boil the remaining pluck with the head for 2 hours.
Place the head on a baking tray, cover it with breadcrumbs, and dot with 1 ounce of dripping.
Brown it in the oven at 400°F (200°C) or before the fire.
Make the mince and liver
Mix the flour with a little cold water, then add pepper, salt, and ½ pint of the boiling water.
Add the minced heart, half the cooked liver, and half the lights.
Cook gently for 20 minutes.
Heat 2 ounces of dripping in a frying pan.
Slice the uncooked half of the liver and fry the slices.
Serve
Serve the head on a dish with the mince around it.
Top with the fried liver and brain cakes.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Lamb's head
- Forms the main dish; boiling first makes the meat tender before browning.
- Flour
- Thickens the boiling liquid into a smooth sauce as it cooks.
- Breadcrumbs
- Forms a crisp, browned crust over the head in the oven.
- Dripping
- Carries heat for browning and adds richness to the crust and frying.
- Liver
- Adds rich, savoury flavour and a firm texture as the fried topping.
The step that matters
Browning the head. Dry, high oven heat browns the breadcrumbs and dripping into a crisp crust through Maillard browning. Browning does not tenderise the meat, so the head must already be well cooked from boiling.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
