Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Melt the butter.

  2. Mix the melted butter with the potatoes, egg, salt, and pepper.

Shape and bake

  1. Form the mixture into a roll on a floured surface.

  2. Twist the roll, joining the edges with a little egg.

  3. Brush the roll with beaten egg and mark with a knife or fork.

  4. Place on a floured baking tray and bake at 400°F (200°C) for 20 minutes until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sieved cooked potatoes
Form the bulk of the roll, giving it a soft, moist interior.
Butter
Adds richness and moisture, keeping the potato mixture soft and flavourful.
Egg
Binds the potato mixture and, brushed on top, helps the crust turn golden.

The step that matters

Joining the edges of the roll. If the twisted seam is not sealed with egg, the edges can separate in the oven and the filling may leak out during baking.

Swap the potato

How well each one fits the dish's main ingredients (butter, egg, pepper):
