What each ingredient does

Rice
Forms the bulk of the mould and sets into a firm shape as it cools.
Water
Cooks the rice until tender so it can be packed and hold its shape.

The step that matters

Let it set, then turn it out onto a plate. The rice must cool and firm up fully before unmoulding; turning it out too early can cause it to slump or break apart. Wetting the mould helps the rice release cleanly.
