Why it works: Syrup and sugar match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Mix the grated lemon rind, lemon juice, syrup, and breadcrumbs to form a thick paste.

  3. Roll out the pastry into two thin sheets, each about 10 inches square.

Assemble

  1. Wet the edges of one sheet and place it on a baking tin.

  2. Spread the syrup mixture over the pastry, leaving a 1-inch border.

  3. Place the second sheet on top and fold the edges over to seal.

Bake and serve

  1. Mark the pastry into squares and bake until golden brown, about 30 to 45 minutes.

  2. Cut into squares and dust with castor sugar before serving.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Short crust pastry
Forms the thin, crisp outer case that encloses the filling.
Syrup
Adds sweetness and moisture to the filling and helps it bind with the crumbs.
Breadcrumbs
Absorb the syrup and lemon juice, giving the filling a thick, spreadable body.
Lemon rind and juice
Provide bright acidity and aroma that balance the sweet syrup.

The step that matters

Sealing the edges. If the edges are not wet and pressed firmly together, the pastry can open or leak syrup during baking, leaving the filling dry at the edges and sticky on the tin.

Swap the lemon

How well each one fits the dish's main ingredients (syrup, sugar):

  1. Vanillafits better
  2. Raisinfits better
  3. Pearfits about as well
  4. Lemonthe original

Fit is the average pairing score against syrup, sugar. Candidates are from the same food group and used in at least 100 recipes.
