Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the apple purée

  1. Peel and core the apples, then chop them.

  2. Combine apples, lemon rind, sugar, and a little water in a pot.

  3. Stew until slightly soft.

  4. Rub the mixture through a sieve to create a smooth purée.

  5. Add egg yolks, lemon juice, and butter to the purée and mix well.

Assemble and bake

  1. Line a pie dish with the short pastry and decorate the edges.

  2. Pour the apple mixture into the pastry shell.

  3. Brush the pastry with beaten egg.

  4. Bake in a preheated oven at 350°F (175°C) for 30 minutes.

Make the meringue and finish

  1. Make a meringue by beating the egg whites with 2 tablespoons of sugar until stiff.

  2. Spread the meringue over the pudding and bake in a cool oven at 300°F (150°C) until set and pale brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk and body of the filling once stewed and puréed.
Eggs
Yolks enrich and thicken the filling, while whites whip into the meringue topping.
Butter
Adds fat for richness and a smoother, softer texture in the filling.
Sugar
Sweetens the apples and helps the meringue whites hold their stiff structure.
Lemon juice
Adds acidity that brightens the sweet apple flavour.

The step that matters

Beat the egg whites until stiff before spreading the meringue. Whites beaten to stiff peaks trap air and hold their shape, so the topping stays light. A cool oven then sets the meringue gently, avoiding over-browning and weeping.

Swap the apple

How well each one fits the dish's main ingredients (butter, lemon, egg, sugar):

  1. Vanillafits better
